One aim of "distilling" could be reducing the risk of compatibility issues between different file formats, versions etc. Depending on the designer sometimes fonts are embedded, sometimes not, sometimes they are converted to curves. Newer machines could support newer file versions. Some (older) RIPs could have (for example font) problems working with PDFs directly written from all kinds of apps - even one smartphone app for 1 $ on my phone can write PDF (not sure about their quality). In the meanwhile there exist many versions and revisions of this standard file format, and even different apps embed different additional information into their PDF documents to keep them for example "editable" after export, such as Adobe Illustrator. Then they also added a distiller server system to their feature list, so the conversion can happen centralized on a server and not on the client workstations. I think in later versions you were able to use it like a postscript printer driver that enabled you to redirect the print output from any application into a PDF file, even from those applications that did not understand PDF natively. But, I can still remember making these PS exports from applications that did not yet support PDF (in the mid 1990ies). Fortunately I do not deal with these technical problems anymore. In the beginning distiller was more or less just a kind of file converter that converted PostScript (PS) files into the PDF format. I had read that Adobe, in trying to print to a file creates a temp file that can sometimes be renamed ".pdf" to make it a PDF. Simply Drag & Drop into list or Right click Open With in Finder or Drop on 'PS-to-PDF' application to add files for conversion beside direct Add File/Folder buttons.
